i have meant to make marshmallows for the longest time. here in germany the are (unfortunately!) not very popular and self-made ones are not to be found.
in france however, almost every bakery made their own marshmallows - les guimauves.
i stuck to david lebovitz's recipe.
i used sheet gelatin and i had no problems.
what really took a while longer than expected was beating the mix until it was cool.
and i used a french vanilla extract that included vanilla seeds.
next time i will try making marshmallows with fruit puree!
