ricotta cheesecake with blackberries. ricotta käsekuchen mit bromberren.

this is one heck of a cheesecake.

dense, slightly crumbly and rich, 
it's perfect with just the blackberries inside.

for an even richer cake, 
swap the milk for cream.

great to make in advance, 
it will keep chilled for a couple of days. 

a cute cake.

ricotta cheesecake with blackberries


for one cake, 20-22 cm in diameter

pâte sucrée d'amande:

70g butter
38g powdered sugar
25g ground almonds
1/8 tsp salt
1/8 tsp vanilla
25g eggs
120g all-purpose flour

cheesecake filling:

500g ricotta
125g yogurt (full-fat)
100g sugar
grated zest of 1/2 lemon
1/2 vanilla bean
1/8 tsp salt
dash of cinnamon
3 eggs
1 egg yolk
125ml milk (full-fat)
1 tsp all-purpose flour

250g blackberries


make pâte brisée: 
cream butter, sugar, eggs, vanilla and salt.
add flour and almonds, blend well.
chill for at least 1 hour before rolling it out.
 then roll the dough around 4mm thick, cut it out to fit the bottom of your form.
poke the bottoms with a fork, to avoid air bubbles.
bake for around 10-15 minutes, or until slightly set at 180 degrees celcius.
let cool.

for the filling:
cream the ricotta, yogurt, sugar and spices until smooth.
add the eggs and the egg yolk, one at a time.
mix in the milk and the flour and blend until smooth.
pour into your baking form.
drop in your blackberries and bake for 40-45 minutes or until set.
after around 20 minutes, turn down the temperature to 170 degrees.
let cool.

note:

dichte beschaffenheit, etwas krümlig und trotzdem feucht und mächtig, 
und die brombeeren ergänzen sich hervorragend.

für einen noch reichhaltigeren kuchen, 
kann man die milch mit sahne ersetzen.

man kann ihn toll im vorraus machen, 
und er hält sich gekühlt ohne probleme mehrere tage. 

ein süsser kuchen.

übrigens, ich habe den kuchen unerwartet gemacht,

ricotta käsekuchen mit brombeeren

für einen kuchen, 20-22 cm im umfang

pâte sucrée d'amande:

70g butter
38g puderzucker
25g gemahlene mandeln
1/8 tsp salz
1/8 tsp vanille
25g eier
120g mehl

füllung:

500g ricotta
125g joghurt (voll-fett stufe)
100g zucker
zeste einer halben zitrone
1/2 vanille schote
1/8 teelöffel salz 
prise zimt
3 eier
1 eigelb
125ml milch (voll-fett stufe)
1 tsp mehl

250g brombeeren

stelle das pâte brisée her: 
vermische die butter, den zucker, die eier und das salz.
füge das mehl und die mandeln hinzu und verknete alles gut.
kühle es für wenigstens eine stunde, bevor du es ausrollst.
rolle den teig auf 4 mm dicke aus, belege den boden deiner form damit.
steche den boden mit einer gabel ein, um luftblasen zu vermeiden.
backe für 10-15 minuten, bis der boden leicht angebacken ist, bei 180 grad celsius.
lass es auskühlen.


für die füllung:
rühre den ricotta, den joghurt, den zucher und die gewürze glatt.
füge die eier und das eigelb nacheinander hinzu.
vermische nun die milch und das mehl mit der masse bis diese glatt ist.
giesse die masse nun in deine form.
verteile die brombeeren in der masse und backe für 40-45 minuten oder bis die masse fest ist.
stelle die temperatur nach 20 minuten auf 170 grad runter.
lasse den kuchen auskühlen.

anmerkung:

wenn du etwas von dem pâte sucrée d'amande über hast, kannst du den teig hervorragend bei diesen frucht törtchen verarbeiten.

this is the kind of wafer you love to have nestled in your ice cream
or placed beside your coffee.

crisp and with a strong, smooth vanilla taste,
they can be enjoyed on their own or also dipped into a warm beverage.

i was surprised how easy they were actually to make,
these thin, delicate cookies.

they look plain,
and yet so elegant.

and they taste so good.

115g flour
100g powdered sugar
1/8 tsp salt

75g butter
100g egg whites
35g cream
1/2 tsp vanilla extract


melt the butter.
set aside.
in a larger bowl, sieve the flour, powdered sugar and salt.
now add the butter, egg whites, cream and vanilla extract.
whisk until smooth.
let stand, covered for at least two hours.

preheat the oven to 185-190 degrees celsius.
drop by the spoonful on the baking sheet, leaving lots of space in between, and spread into a thin circle with a pallet, knife or spoon.
you can also cut out a circle out of cardboard (7-8 cm in diameter), and spread the batter over the cutout in a thin layer.
you should be able to bake 9 on a baking sheet.
bake for around 8 minutes or until the edges are browned.
immediately roll up into rolls.
these wafers will cool really quickly, so if you do not get all of them rolled up at once, transfer the baking sheet back into the oven for another minute.
these crisp rolls keep for weeks if stored in a dry, air-tight container.

oder neben deinem kaffee.

knusprig und mit einer starken, aber geschmeidigen vanille note, 
 sind sie zum alleinigen genuss bestimmt,
können aber auch in ein heissgetränk getunkt werden.

ich war überrascht wie einfach sie tatsächlich zu machen waren, 
diese dünnen, zarten kekse.

sie sehen so gewöhnlich aus, 
und trotzdem elegant.

und sie schmecken richtig gut.

115g mehl
100g puderzucker
1/8 teelöffel salz

75g butter
100g eiklar
35g sahne
1/2 tsp vanille extrakt


schmelze die butter.
stelle sie beiseite.
in einer grösseren schüssel, siebe das mehl, den puderzucker und das salz zusammen.
füge nun die butter, das eiklar, die sahne und die vanille hinzu.
rühre die masse glatt.
lasse sie zugedeckt mindestens zwei stunden ruhen. 

heize den ofen auf 185-190 grad celsius vor.
gebe die masse löffelweisse auf dein backpapier und lasse einiges an platz dazwischen.
streiche sie rund, glatt und dünn mit einer palette, einem messer oder einem löffel auf.
man kann auch einen kreis aus karton ausschneiden (7-8 cm im durchmesser) und die masse darin dünn aufstreichen.
es passen ca. neun stück auf ein blech.
backe sie für ungefähr 8 minuten oder bis die ränder gebräunt sind.
rolle sie sofort in röllchen auf.
diese waffeln kühlen schnell aus, das heisst wenn nicht alle schnell genug aufgerollt werden können, können sie im ofen eine minute lang wieder weich werden.
diese knusprigen röllchen halten sich wochenlang wenn sie trocken und luftdicht verpackt werden.

i've eaten a similar kind of brownie at starbucks.
it tastes fine, but lacked a moist, fudgy brownie, a salty caramel and truly toasted pecans.
with this recipe you cannot go wrong.

the brownie is still cakey, but nice and moist.
the caramel is ever-so-slightly salty and so addictive.
and the toasted pecans 
- seriously toast some pecans -
smell and taste heavenly.

this is the kind of brownie, that you can hardly stop eating.
the kind of brownie, that if you have visitors, the plate will be empty afterwards.
a one of a kind brownie.

turtle brownies


100g butter
80g dark chocolate (at least 70% cocoa)
2 eggs 
200g sugar
55g milk
1 tsp vanilla extract
65g flour
1/4 tsp baking powder
1/2 tsp coarse salt

topping:

200g sugar
75g heavy cream
1 tsp vanilla extract
1/2 tsp coarse salt

100g toasted pecans, chopped

preheat the oven to 165 degrees celsius.
line a square baking pan with parchment paper.

melt chocolate and butter in a pot over low heat.
simultaneously, beat sugar and eggs until fluffy and pale.
add the chocolate mixture, the milk and the vanilla.
mix well.
mix in the flour, baking powder and salt.
pour into the baking pan and bake for 25-30 minutes.
let cool.

keep the oven on, turning it up to 180 degrees celsius.
chop the pecans roughly and toast them in the oven for around 10 minutes.

to make the topping, add 1/4 of the sugar into a pan and melt over medium heat.
when the sugar has melted completely and caramelized a bit, then add more sugar.
repeat this process, stirring when necessary, until all the sugar is caramelized.
now pour the cream in slowly, stirring all the while.
remove from heat, add the vanilla and salt.
add the chopped pecans and spread on the brownies.
let cool.

ich habe einen ähnlichen brownie bei starbucks gegessen.
es hat okay geschmeckt, aber es war ziemlich trocken und es fehle ein salziges karamell und geröstete pecannüsse.
diesem rezept fehlt es an nichts.

der brownie ist immernoch nah an einem kuchen, aber schön feucht.
das karamell ist ein wenig gesalzen, und es macht so süchtig.
und die gerösteten pecannüsse
- kein witz, röstet mal pecannüsse -
riechen und schmecken himmlisch.

man kann kaum aufhören diesen brownie zu essen.
es ist die sorte brownie, wo der teller hinterher leer ist wenn du gäste hast.
ein unvergleichlicher brownie.

turtle brownies

100g butter
80g dunkle schokolade (mindestens 70% kakao)
2 eier
200g zucker
55g milch
1 tsp vanille extrakt
65g mehl
1/4 tsp backpulver
1/2 tsp grobes salz (fleur du sel)

überzug:

200g zucker
75g sahne
1 tsp vanille extrakt
1/2 tsp grobes salz (fleur du sel)

100g geröstete pecannüsse, zerhackt

heize den ofen auf 165 grad celsius vor.
lege eine quadratische backform mit backpapier aus.

schmelze die schokolade und die butter in einem topf über niedriger hitze.
schlage zur gleichen zeit den zucker und die eier auf bis sie hell sind.
füge die schokoladen mischung hinzu mit der milch und der vanille.
vermische alles gut.
mische das mehl, das backpulver und das salz unter.
giesse es in die backform und backe für 25-30 minuten.
lasse die brownies auskühlen.

lasse den ofen an, und stelle ihn auf 180 grad celsius hinauf.
zerhacke die pecannüsse und röste sie im ofen für ca. 10 minuten.

um den den überzug zu machen, gebe 1/4 des zuckers in einen topf und schmelze es bei mittlerer hitze.
wenn der zucker komplett geschmolzen ist und etwas karamellisiert ist, füge etwas mehr zucker hinzu.
wiederhole diesen schritt, und rühre wenn nötig, bis all der zucker karamellisiert ist.
giesse nun die sahne unter ständigem rühren langsam in das karamell.
nimm den topf von der hitze und füge die vanille und das salz hinzu. 
rühre die pecannüsse als leztes rein und streiche es auf die brownies.
lasse alles auskühlen.

i had some left over pâte sucrée,
so i decided to make these little ones.

what's important,
is to use fresh fruit that looks nice.
the best would be seasonal of course.

uhuummm, strawberries...

anyway,
they taste so fresh.
and the contrast between the crispy shell and the creamy, fruity inside is a true delight.
did i mention they look really pretty too?

fresh fruit tartelettes

makes 8-10

pâte sucrée d'amande:

70g butter
38g powdered sugar
25g ground almonds
1/8 tsp salt
1/8 tsp vanilla
25g eggs
120g all-purpose flour

creme patissière:

175g milk
35g sugar
1/4 vanilla bean
30g egg yolks
15g cornstarch
10g butter

50g bittersweet chocolate

mixed fruit, i used strawberries and blueberriea


make pâte brisée: 
cream butter, sugar, eggs, vanilla and salt.
add flour and almonds, blend well.
chill for at least 1 hour before rolling it out.
 then roll the dough around 3-4mm thick, cut out in circles, a few cm larger than the rim of your forms, then press into your tartelette forms.
poke the bottoms with a fork, to avoid air bubbles.
bake for around 15 minutes, or until golden-brown at 180 degrees celcius.
let cool.

make crème pâtissière.
heat milk with sugar, vanilla and salt.
meanwhile beat egg yolks and cornstarch until thick.
make sure, that your milk is only heated slightly, then add your egg mix, stirring constantly.
it's important that your milk isn't too hot, or else the egg yolks will scramble.
turn up heat and wait for the creme to boil, stirring constantly.
let it boil shortly, don't forget stirring, then take from heat and keep on stirring on a cold water bath.
when it has cooled off to about 70 degrees celcius, add the cut butter and stir.
let cool.

melt a small amount of chocolate and brush the insides of the pastry shells with the chocolate.
don't worry, the chocolate does not have to be tempered for this.
let harden.

when the pastry cream is cooled, whisk shortly to restore a smooth consistency. 
fill into a pastry bag and pipe into the tartelette forms.

cut your fruit and arrange on the pastry cream.

also entschied ich mich diese kleinen zu machen.

was wichtig ist:
frische früchte benutzen die gut aussehen. 
das beste wäre natürlich saisonale früchte zu benutzen.

uhuummm, erdbeeren...

jedenfalls, 
sie schmecken wahnsinnig frisch.
und der kontrast zwischen der knusprigen schale und dem kremigen, fruchtigen inneren ist wahrlich ein entzücken. 
ach, und habe ich erwähnt dass sie auch wirklich hübsch sind?

frische frucht törtchen

macht 8-10

pâte sucrée d'amande:

70g butter
38g puderzucker
25g gemahlene mandeln 
1/8 tsp salz
1/8 tsp vanille extrakt
25g eier
120g mehl

creme patissière:

175g milch
35g zucker
1/4 vanille schote
30g eigelb
15g stärke
10g butter

50g dunkle schokolade

verschiedene früchte, ich habe erdbeeren und blaubeeren benutzt

stelle das pâte brisée her: 
vermische die butter, den zucker, die eier und das salz.
füge das mehl und die mandeln hinzu und verknete alles gut.
kühle es für wenigstens eine stunde, bevor du es ausrollst.
rolle den teig auf 3-4 mm dicke aus, steche kreise aus, ein paar cm grösser als der rand deiner formen, dann presse diese in deine törtchen form.
steche den boden mit einer gabel ein, um luftblasen zu vermeiden.
backe für ca. 15 minuten, bis die ränder gold-braun sind, bei 180 grad celsius.
lass sie auskühlen.

stelle die crème pâtissière her:
erhitze die milch mit dem zucker und der vanille.
schlage das eigelb und die stärke währenddessen zusammen auf.
stelle sicher, dass die milch nicht zu warm geworden ist, dann rühre das eigelb gemisch ein.
es ist wichtig, dass deine milch nicht zu heiss ist, sonst wird das eigelb grisselig.
erhöhe die hitze und rühre bis es kocht.
lass es kurz köcheln, und vergesse nicht dabei zu rühren, und rühre weiter auf einem kalten wasserbad.
wenn es auf ca. 70 grad runter gekühlt ist, rühre die butter ein.
lasse es auskühlen.

schmelze die schokolade und pinsele das innere der mürbeteig schalen mit der schokolade aus.
keine sorge, die schokolade muss dafür nicht temperiert sein.
lass sie aushärten.

wenn die creme gekühlt ist, schlage sie kurz mit einem schneebesen auf, um eine cremige und glatte konsistenz herzustellen.

schneide deine früchte und arrangiere diese auf der creme.

granola bars. müsli riegel.

granola is something that i never got around to making.
i never had all the ingredients together at the same time.

now i did.

i researched different recipes,
and this is what turned out.

it's pretty soft, chewy and surprisingly tasty.
lots of diversity of flavors.

and a great snack for in between.

granola bars

adapted from this recipe from smitten kitchen

150g quick rolled oats
150g granulated sugar
  30g oat flour (or 1/3 cup oats, processed till finely ground in a food processor or blender)
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
2 to 3 cups dried fruits and nuts (250-350g, i used sunflower seeds, cashews, shredded coconut, raisins, candied pineapple and melon)
  80g peanut butter
1 teaspoon vanilla extract 
90g butter
70g maple syrup
30g light corn syrup
15 ml water

preheat the oven to 175 degrees celcius.
line a baking pan with parchment paper, greasing it slightly as well.
stir together all the dry ingredients, including the fruit and nuts.
in a separate pot, over low heat, whisk together the vanilla, peanut butter, butter, maple syrup and corn syrup and water until homogeneous .
remove from heat and mix the wet ingredients with the dry until the mixture is evenly crumbly.
spread in the prepared pan, pressing them in firmly to ensure they are molded to the shape of the pan. (a piece of plastic wrap can help with this, as you press down on the back of it.)
bake the bars for around 30 minutes, until they’re brown around the edges — don’t be afraid to get a little color on the tops too.
they’ll still seem soft and almost underbaked when you press into the center of the pan but do not worry, they’ll set completely once completely cool.
cool the bars in their pan completely on a cooling rack.
once cool, a serrated knife to cut the bars into squares.

müsli (riegel) ist etwas, wozu ich nie gekommen bin.
ich hatte nie alle zutaten zur gleichen zeit zusammen.

jetzt hatte ich sie alle da.

ich recherchierte verschiedenste rezepte, 
und das ist dabei rumgekommen.

es ist weich, etwas zäh und überraschend lecker.
es bietet eine grosse vielfalt an geschmäckern.

 und ist ein grossartiger snack für zwischendurch.

 müsli riegel

entnommen von diesem rezept von smitten kitchen

150g zarte haferflocken
150g zucker
  30g hafer mehl (oder 30g haferflocken, in einer küchmaschine klein gemahlen)
1/2 teelöffel salz
1/4 teelöffel zimt
2 bis 3 tassen früchte und nüsse (250-350g, ich habe sonnenblumenkerne, cashews, kokosraspeln, rosinen, kandierte ananas und melone benutzt)
  80g erdnussbutter
1 teelöffel vanille extrakt
90g butter
70g ahorn sirup
30g glucose sirup
15 ml wasser

heize den ofen auf 175 grad celcius vor.
lege eine backform mit backpapier aus und fette diese leicht..
mische alle trockenzutaten zusammen, auch die nüsse und früchte.
in einem seperaten topf, auf kleiner flamme, mische das vanille extakt, die erdnussbutter, die butter, das ahorn sirup, das glucose sirup und das wasser zusammen, bis alles aufgelöst ist. 
nehme die mischung von der hitze und vermische es mit den trockenzutaten gründlich.
verteile es gleichmässig in der backform und drücke es an, um sicher zu gehen, dass keine hohlräume entstanden sind.
backe die riegel für ca. 30 minuten, bis sie bräunlich am rand geworden sind und insgesamt etwas an farbe gewonnen haben,
sie können in der mitte noch etwas ungebacken erscheinen, aber das müsste sich nach dem auskühlen legen und verhärten.
lasse die riegel komplett auskühlen.
wenn diese komplett ausgekühlt sind können sie mit einem scharfen messer in riegel oder in quadrate geschnitten werden.

cheese, beer and mustard pull-apart bread. käse, bier und senf "pull-apart" brot.

i love yeast doughs.
yes, indeed-y i do.
especially warm out of the oven.

i always rather bake sweet than savory.
i'm just that kind of dessert person.

pull-apart bread has been popping up on the internet for quite some time almost everywhere.
lots of blogs have featured a recipe for this style of bread.

and then i read smitten kitchen's recipe for a cheddar, beer and mustard pull-apart bread.
it sounded so intriguing - i had to try it.
simplifying it here and there, but essentially keeping the spirit.

truth be told, i ate too much of it.
it was just too good.

cheese, bier and mustard pull-apart bread

adapted from this recipe from smitten kitchen

bread:

  60g unsalted butter
150ml beer
330g all-purpose flour
40g rye flour
  30g granulated sugar
  42g fresh yeast
  4g table salt
2 large eggs, at room temperature

filling:

  45g unsalted butter
1 tablespoon Dijon or a mustard of your choice
1 1/2 teaspoons Worcestershire sauce
Dash of hot sauce
1 teaspoon mustard powder
1 teaspoon paprika
1/2 teaspoon salt
Several grinds black pepper
200g shredded cheese (i used a sharp chili-gauda cheese)

make the dough:
soften butter.
add the butter, flours, sugar, yeast and salt into a mixing bowl or your kitchen machine.
warm the beer to about 35-38 degrees celcius.
pour the beer into the flour mixture and knead, or let knead, for 5 minutes.
add a few dashes of flour if the dough is too sticky.
oil a medium/large bowl and transfer dough to it.
cover loosely with plastic wrap and set aside for 20-30 minutes.
meanwhile, prepare fillings.

make the filling:
melt the butter, add the mustard, worcestershire and hot sauce until smooth.
set aside.
in the bottom of a medium bowl, stir together mustard powder, paprika, salt and several grinds of black pepper.
add shredded cheddar and toss until grated strands are evenly coated with spices.


assemble the bread:
either coat a 9-by-5 loaf pan lightly with butter or a nonstick spray and set aside.
turn dough out onto a well-floured counter and roll the dough into a large rectangle, making sure it doesn’t stick to the counter by lifting sections and re-flouring the counter as needed.
brush the butter-mustard-worcestershire mixture evenly over the whole surface, right up to the edges. cut the dough crosswise into 5 strips.
sprinkle the first one evenly with a heaping 1/4 of the grated cheese.
gently place another strip on top of it, coat it with another heaping of cheese, and repeat with remaining strips until they are stacked 5-high and all of the cheese is used.
with your very sharpest serrated knife, gently cut your stack into 6 to 7.
arrange stacks of dough down the length of your prepared loaf pan.
loosely cover the pan with more plastic wrap and set it aside to rise again for 15-20 minutes. meanwhile, preheat your oven to 350 degrees.
bake loaf for 25 to 30 minutes, until puffed and brown.
transfer it to a wire rack and let it cool for 5 minutes before flipping it out onto a serving plate/cutting board.
Loaf “pulls” apart the easiest when it is hot or warm. If it has cooled beyond the point that the layers wish to easily separate, simply serve it in thin slices.

ich würde immer lieber was süsses als was herzhaftes backen.
anscheinend bin ich einfach ein nachtisch mensch.

"pull-apart" brot, also brot zum auseinanderziehen, taucht seit einiger zeit immer mehr im internet auf.
viele blogs haben einen solchen beitrag gebracht.

und dann habe ich smitten kitchen's rezept für cheddar, bier und senf "pull-apart" brot gesehen.
es hat sich so interessant angehört - ich musste es einfach probieren.
ich habe es hier und da vereinfacht, aber generell den geist des rezept gewahrt.

um ehrlich zu sein habe ich davon zu viel gegessen.
es war einfach viel zu gut.

käse, bier und senf "pull-apart" brot

basierend auf diesem rezept von smitten kitchen

brot:

60g ungesalzene butter
150ml bier
330g mehl
40g roggen mehl
  30g zucker
  42g hefe
  4g salz
2 eier

füllung:


  45g ungesalzene butter
1esslöffel senf
1 1/2 teelöffel worcestershire sauce
prise tabasco
1 teelöffel senfpulver
1 teelöffel paprika
1/2 teelöffel salz
prise schwarzer pfeffer
200g geriebener käse (ich habe einen scharfen chili-gauda benutzt)

mache den teig:
mache die butter weich.
füge die butter, die mehle, den zucker, die hefe und das salz in eine rührschüssel oder küchenmaschine.
wärme das bier auf 35-38 grad celsius.

giesse das bier in das mehl gemisch und knete, oder lasse es kneten, für 5 minuten.
füge ein wenig mehl hinzu wenn der teig zu klebrig ist.
fette eine schüssel und gebe den teig hinein.
decke es locker ab und lasse es 20-30 minuten gehen.
stelle in der zwischenzeit die füllung her.

mache die füllung:
schmelze die butter und vermische diese mit dem senf, der worcestershire sauce und dem tabasco.
stelle es beiseite.
in einer mittelgrossen schüssel, vermische das senfpulver, das paprika, das salz und den pfeffer.
füge den käse hinzu und mische diesen mit den gewürzen.

stelle das brot zusammen:
fette eine kasten form und stelle diese beiseite.
auf einer gut bemehlten oberfläche, rolle den teig auf ein grosses rechteck aus.
pinsele dieses komplett mit dem buttergemisch aus und schneide den teig in 5 streifen.
bestreue den ersten streifen mit 1/4 des käses.
platziere den nächsten streifen darauf, bestreue den streifen mit käse und wiederhole diesen vorgang mit den restlichen teigstreifen.
mit einem scharfen brotmesser, schneide den stappel in 6-7 stücke.
lege diese stücke hochkant in deine kastenform.
verdecke die form weitere 15-20 minuten zum weiteren aufgehen des teiges.
heize in der zwischenzeit deinen ofen auf 350 grad celcius vor.
backe das brot für 25-30 minuten, oder bis es deutlich aufgegangen und gebräunt ist.
lasse es 5 minuten auskühlen bevor das brot vorsichtig aus der form geklopft wird und auf eine platte gestellt wird.
am besten kann man das brot im warmen zustand auseinanderziehen, wenn es zu kalt geworden ist kann man das brot in streifen schneiden.

vanilla tapioca cream. vanille tapioca creme.

this is so typically american.
at least for me it is.

i remember my mother making this for us as kids,
but only when we were in the U.S.

you don't really find it in germany in stores.
try the internet, or your local asian store to find this treasure.

it's so versatile.
cook it in coffee, wine or juice and you get little bubbles filled with flavor.

i stuck to the classic.
because sometimes food is where the heart is.

vanilla tapioca pudding

makes 2 servings

350ml milk (full fat)
30g tapioca
30g sugar
1 egg yolk
1/4 tsp pink himalayan salt
1/4 tsp vanilla extract
1/4 vanilla bean

soak the tapioca in 100ml of the milk for half an hour.
then add the rest of the milk, the sugar, the egg yolk, salt and vanilla.
throw in the vanilla bean itself as well, this extracts even more flavor.
bring to a boil at medium to high heat, but watch out that it is not too hot, or else the tapioca will burn or stick together, this might take around 10 minutes.
boil for one minute, stirring all the while, then let simmer, while still stirring, until the tapioca pearls have gotten see-through and larger.
remove the vanilla bean and pour the tapioca into two serving glasses or bowls.

enjoy warm or cooled.

diese creme ist typisch amerikanisch.
zumindest für mich.

ich erinnere mich wie unsere mutter es für uns kinder gekocht hat, 
leider nur wenn wir in den USA waren.

in deutschland findest du tapioca perlen nicht wirklich in den läden.
versuche diesen schatz im internet oder in einem asia laden zu finden.

es ist so vielseitig.
koche es in kaffee, in wein oder in saft und du bekommst kleine bläschen rand voll mit geschmack.

ich hab mich an den klassiker gehalten.
manchmal ist essen einfach dort wo dein herz ist.

vanille tapioca pudding

für zwei portionen

350ml milch (3,5% fett)
30g tapioca perlen (kleine grösse)
30g zucker
1 eigelb
1/4 teelöffel pink himalaya salz
1/4 teelöffel vanille extrakt
1/4 vanille schote

weiche die tapioca perlen für eine halbe stunde in 100ml der milch ein.
gebe dann den rest milch, den zucker, das eigelb, das salz und die vanille hinzu.
gebe die ausgekratzte schote auch hinein, dadurch bekommt man noch mehr geschmack.
koche das gemisch bei mittlerer bis hoher hitze auf, aber gib acht dass es nicht zu heiss ist, sonst brennen die perlen unten am topf an oder sie können zusammen kleben.
das zum kochen bringen dauert ca. 10 minuten.
koche die creme unter ständigem rühren für eine minute, lasse es dann weiter köcheln, auch unter rühren, bis die perlen durchsichtig und merklich grösser geworden sind.
entferne die vanille schote und giesse das tapioca in zwei glässer oder schüsseln.
geniesse die creme warm oder erkaltet.
