Sweet Potato Soup. Süßkartoffelsuppe.

 

This recipe has been inspired by Yvette van Boven's recipe in her cookbook HOMEMADE.
This book was gifted at Christmas and I love paging through it -
beautiful photos, neat illustrations, wonderful recipes.

But back to the soup.
As I made this, there was loads of snow outside, it was freezing cold and I felt like SOUP.
This one here is easy to make and I was surprised just how good it tasted.
There are a number of complex flavors and I love the different textures of the soft sweet potato bits, dense chickpeas and crunchy cashews.

I can only recommend you try it.

Sweet Potato Soup

1 kg sweet potatoes
1 leek, washed and cut into rounds
1 onion, diced
2 cloves garlic, chopped
1 Tbsp. butter
200ml white wine
1 L vegetable broth
1 bay leaf
1/8 tsp. cayenne pepper
1 can chickpeas (around 400g)
salt and pepper to taste
some fresh thyme or oregano

Cashews:
75g cashews
40g butter
sprinkle of fleur de sel

Creme fraiche

Preheat the oven to 200 degrees Celsius.
Peel and cube the sweet potato and place in the oven with a drizzle of olive oil and sea salt, if you wish.
Roast for 25 minutes.
In the meantime, prepare your vegetables.

Also, prepare the cashews:
melt the butter in a pan, add the cashews and salt - toss.
Transfer the cashews onto a baking sheet and bake in the oven (alongside the potatoes) until they are browned.
This takes around 10-15 minutes.

When the sweet potatoes are almost ready, braise the onion, leeks and garlic in the butter.
Add the sweet potatoes and the white wine.
Blend in the broth as well as the bay leaf and the cayenne pepper. 
Simmer on low heat for around 20 minutes.
Remove half of the vegetables from the pan and puree the other half with a blender.
Replace the removed vegetables and add the chickpeas and additional spices. 

Serve with generous dollops of creme fraiche and buttered cashews.

Aber zurück zur Suppe.
Als ich's gemacht habe, lag draussen viel Schnee, es war wahnsinnig kalt und ich hatte hatte Lust auf SUPPE.
Diese hier ist einfach herzustellen und ich war überrascht das sie wirklich so gut geschmeckt hat.
Sie beinhaltet eine ganze Reihe an komplexen Geschmäckern und ich liebe die verschiedenen Texturen, die weichen Süßkartoffel Stückchen, dichte Kichererbsen und knusprige Cashewnüsse.

Ich empfehle euch sie auszuprobieren.

Süßkartoffelsuppe

1 kg Süßkartoffeln
1 Stange Porree, gewaschen und in Ringen geschnitten
1 Zwiebel, gehackt
2 Knoblauchzehen, fein geschnitten
1 Eßlöffel Butter
200ml Weißwein
1 L Gemüsebrühe
1 Lorbeerblatt
1/8 Teelöffel Cayenne Pfeffer
1 Dose Kichererbsen (ca. 400g)
Salz & Pfeffer zum würzen
etwas frischer Thymian oder Oregano

Cashewnüsse:
75g Cashewnüsse
40g Butter
Prise Fleur de Sel

Creme Fraiche

Heize den Ofen auf 200 Grad Celsius vor.
Schäle die Süßkartoffeln und schneide sie in Würfel.
Röste sie im Ofen mit einem Schuss Olivenöl und Fleur de Sel für 25 Minuten.
In der Zwischenzeit kann das Gemüse vorbereitet werden.

Bereite auch die Cashewnüsse vor:
schmelze die Butter in einer Pfanne, füge die Nüsse und das Salz hinzu und wende sie in der Butter.
Gebe die Nüsse nun auf ein Backblech und backe sie im Ofen (mit den Kartoffeln) bis sie gebräunt sind.
Das dauert ca. 10-15 Minuten.

Wenn die Süßkartoffeln fast fertig sind, schwitze die Zwiebel, den Porree und den Knoblauch in der Butter an.
Füge die Süßkartoffeln und den Weißwein hinzu.
Gebe die Gemüsebrühe zusammen mit dem Lorbeerblatt und dem Cayenne Pfeffer hinein.
Lass alles um die 20 Minuten köcheln.
Schöpfe die Hälfte des Gemüses ab und püriere den Rest.
Gebe das Gemüse und die Kichererbsen zum Pürierten hinzu und würze die Suppe.

Serviere sie mit einem großen Klacks Creme fraiche und den gebutterten Cashewnüssen.
