Chocolate Chip Cookies.


Oh, this must be my favorite cookie.
The keys to an amazing chocolate chip cookie? 
Great chocolate, a pinch of nutmeg and SALT.
Rest the dough overnight before baking.

Follow my few humble tips and you will be the envy of every cookie baker.
And it will be hard to stop eating at one or two cookies.

Chocolate Chip Cookies

time: 30 minutes, plus overnight chilling, plus 30 minutes baking
yields: 16-18

100g butter
100g brown sugar
60g granulated sugar
1 egg
1 tsp. vanilla extract
110g all-purpose flour
60g whole-wheat flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/8 tsp. nutmeg
150g chocolate chips
50g pecans, chopped roughly
Sea salt for sprinkling

Cream the butter and sugars.
Add the egg and the vanilla extract and mix.
Add the flours, baking powder, baking soda, salt and nutmeg.
Add the chocolate chips and mix until just combined.
Wrap the dough in plastic foil and refrigerate overnight, or at least 6 hours.

Preheat the oven to 175 degrees Celsius.
Drop the cookie dough as walnut sized balls onto the baking sheet, leaving enough space in between the cookies for them to spread.
Bake for 10-12 minutes, or until the edges are slightly browned.
Let cool slightly before moving the cookies to a cooling rack.

Folge meinen bescheidenen Tips und du wirst den Neid von jedem Kekse Bäcker auf dich ziehen.
Und es wird selbst schwer sein beim Naschen nur bei ein oder zwei Keksen zu bleiben.

Schokostückchen Cookies

Zeit: 30 Minuten, plus Kühlstellen Übernacht, 30 Minuten Backzeit 
Ergibt: 

100g Butter
100g braunen Zucker
60g Kristallzucker
1 Ei
1 Teelöffel Vanille Extrakt
110g Mehl
60g Weizenvollkornmehl
1 Teelöffel Backpulver
1 Teelöffel Natron
1 Teelöffel Salz
1/8 Teelöffel Muskatnuss
100g Vollmilch Schokoladenstückchen
50g Pecannüsse, grob gehackt
Meersalz zum bestreuen

Rühre die Butter mit dem Zucker leicht schaumig.
Füge das Ei und die Vanille hinzu und vermische alles gut.
Gebe nun die Mehle, Backpulver, Natron, Salz und Muskatnuss hinzu.
Füge als letztes  die Schokoladenstückchen hinzu und mische soweit dass alles untergerührt ist.
Packe den Teig in Frischhaltefolie ein und lass ihn Übernacht durchziehen, oder wenigsten 6 Stunden.

Heize den Ofen auf 175 Grad Celsius vor. 
Forme den Teig zu Walnussgrossen Bällen, plaziere sie auf Backpapier, aber lasse genug Platz zwischen den Cookies um auseinander zu gehen.
Backe für 10-12 Minuten, oder bis der Rand leicht gebräunt ist.
Lass sie kurz auskühlen bevor sie auf eine Gitter umgesetzt werden.

Chocolate Chip Cookies

Time: 45 minutes (for 1 6-cookie batch), plus at least 24 hours’ chilling

2 1/4 cups flour
1 1/3 cups bread flour
1 1/4 tsp. baking soda
1 1/2 tsp. baking powder
1 1/2 teaspoons coarse salt
1 1/4 cups unsalted butter
1 cup light brown sugar
1 1/4 cup granulated sugar
2 large eggs
2 teaspoons natural vanilla extract
1 bar bittersweet chocolate, roughly chopped
1 cup pecans, roughly chopped
Sea salt

Sift flours, baking soda, baking powder and salt into a bowl. 
Set aside.
Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. 
Add eggs, one at a time, mixing well after each addition. 
Stir in the vanilla. 
Reduce speed to low, add dry ingredients and mix until just combined, 5 to 10 seconds. 
Drop chocolate and pecan pieces in and incorporate them without breaking them. 
Press plastic wrap against dough and refrigerate for 24 to 36 hours. 
Dough may be used in batches, and can be refrigerated for up to 72 hours.
When ready to bake, preheat oven to 350 degrees. 
Line a baking sheet with parchment paper or a nonstick baking mat. 
Set aside.
Scoop 6 3 1/2-ounce mounds of dough (the size of generous golf balls) onto baking sheet, making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie. Sprinkle lightly with sea salt and bake until golden brown but still soft, 18 to 20 minutes. 
Transfer sheet to a wire rack for 10 minutes, then slip cookies onto another rack to cool a bit more. Repeat with remaining dough, or reserve dough, refrigerated, for baking remaining batches the next day.

Big Cluster Granola.


Okay, so the granola recipes I’ve given you guys before are super yummy, not too sweet and perfect to mix into your morning yoghurt.
I now want to achieve big clusters though, and this is where an egg white comes in.
It acts as a glue and binds all those scrumptious ingredients together.
Voila – wonderful clusters to crunch on plain or add to your breakfast in any which way.


Be creative, add the nuts, fruit and spices you like.
I opted for a version with almonds, coconut flakes and freeze dried banana.
Topped with pomegranate seeds, served with almond milk, it looks and tastes divine!

Big Cluster Granola

time 20 minutes plus 45 minutes baking, after cooling another 5 minutes
yields enough granola to tide you over for quite a few breakfasts!

240g instant rolled oats
50g unsweetened shredded or flaked coconut
100g nuts, coarsely chopped
25g toasted wheat germ or 50g whole wheat flour
50ml olive oil
1/2 tsp. coarse salt
100ml maple syrup
1 tsp. vanilla extract
50g brown sugar
1/4 tsp. ground cinnamon
1/4 tsp. cardamom
1/4 tsp. himalayan salt
2 egg whites
150g dried fruit, diced if large pieces
(I used 70g freeze dried bananas)

Preheat your oven to 160 degrees Celsius.
Combine all ingredients but the egg white and dried fruit in a large bowl, tossing to coat evenly.
Whisk the egg white in a small bowl until frothy.
Stir into the granola mixture, distributing it throughout.
Spread it in a single layer on a parchment-lined baking sheet.
Bake for 45 minutes.
About halfway through the baking time, use a large spatula to turn over sections of the granola carefully, breaking them up as little as possible.
Rotate the pan if granola is baking unevenly.
When it is evenly browned and feels dry to the touch, transfer the pan from the oven to the cooling rack.
Cool completely.
Once it’s completely cool, break up granola into whatever size clusters delight you.
Sprinkle in dried fruit.
The granola keeps at room temperature in an airtight container for weeks on end, great for freezing too.



Also, die Granola Rezepte die ich euch bisher gegeben habe sind super lecker, nicht zu süß und perfekt für den morgendlichen Joghurt. 
Jetzt wollte ich aber unbedingt ultimative Knusperstücke haben; da hab ich die Zauberzutat Eiklar reingeworfen.
Es verhält sich wie ein Bindemittel und bindet all die leckeren Komponenten zusammen. 
Voila - schön große Knusperstückchen zum snacken oder um in dein Frühstück (oder jede andere Mahlzeit) einzubringen. 

Sei kreativ, füge Nüsse, Früchte und Gewürze nach Belieben hinzu.
Ich habe mich für eine Version mit Mandeln, Kokosflocken und gefriergetrocknete Bananen entschieden.
Abgerundet mit Granatapfelkernen, mit Mandelmilch aufgegossen, sieht wunderbar aus und schmeckt genauso!

Knuspermüsli (Granola)

Zeit 20 Minuten plus 45 Backzeit, nach dem auskühlen nochmal 5 Minuten
Ergibt genug für viele Müslis!

240g Haferflocken, fein
50g Kokosflocken
100g Nüsse, grob gehackt
25g Weizenkeime oder 50g Vollkorn Weizenmehl
50ml Olivenöl
1/2 Teelöffel grobes Meersalz
100ml Ahornsirup
1 tsp. vanilla extract
50g brauner umraffinierter Zucker
1/4 Teelöffel Zimt
1/4 Teelöffel Kardamom 
1/4 Teelöffel feines Himalaya Salz
2 Eiklar
150g getrocknete Früchte, mundgerecht klein gehackt
(ich habe 70g gefriergetrocknete Bananenscheiben benutzt)

Heize den Ofen auf 160 Grad Celsius 
Mische alle Zutaten bis auf das Eiklar und die getrockneten Früchte zusammen.
Schlage das Eiklar in einem kleinen Behälter schaumig auf.
Rühre sie gleichmässig in die Müslimischung.
Verteile nun eine Schicht auf einem mit Backpapier ausgelegten Blech. 
Backe für 45 Minuten.
Nach Vergehen der halben Zeit, drehe das Müsli Stückchenweise vorsichtig mit einem größeren Spatel. 
Rotiere das Blech falls es ungleichmässig bäckt.
Wenn das Müsli goldbraun gebacken ist und vollkommen ´trocken´ ist, setze es auf ein Abkühlgitter um.
Lasse es komplett auskühlen.
Danach in gewünscht große Stücke brechen und die Trockenfrüchte hinzufügen.
Das Granola hält sich bei Raumtemperatur in einem luftdichten Behälter für Wochen, man kann´s auch hervorragend einfrieren.

Maelu.


On the 11th of February I started working for Maelu in Munich.

Run and owned by the pastry chef couple Ralf and Sonja Mäser-Luksch, their original and exclusive patisserie has delighted friends of top-notch sweets for over 10 years.
And now I'm part of the team, churning out individual cakes, macaroons and now for Easter - chocolate specialties.

If you're ever around in Munich, come visit us in the central city, drop by for one of our delectable pastries and a beverage. 

 I can only recommend to treat yourself with this small luxury. 


Am 11ten Februar habe ich angefangen für Maelu in München zu arbeiten.

Der Laden gehört dem Konditormeisterpaar Ralf und Sonja Mäser-Luksch und wird von ihnen geleitet; ihre exklusive Patisserie begeistert Freunde von hochklassigem Süß seit über 10 Jahren. 
Nun bin ich Teil des Teams und stelle Tag für Tag frische Törtchen, Macarons und gerade jetzt zu Ostern, Schokoladenspezialitäten her. 

Falls es dich mal nach München verschlägt - komm für ein leckeres Törtchen und ein Getränk bei uns vorbei.

Cheesecake, German-style.


Okay, I’ll admit I prefer the American cheesecake. 
The dense kind with cream cheese and a cracker crust. 
I’ve already got a great recipe there.
But I’m still searching for variations of a recipe for the German style cheesecake though.
The German version has it’s perks – it’s got that particular taste that only quark will deliver. 
It’s pretty fluffy and light and the shortbread crust is great.
This version is from my best friend’s Grandma and it’s been a great hit with everyone I’ve baked it for.

German cheesecake

time: 50 minutes plus 50 minutes baking
yields: 1 cake 28 cm in diameter or 2 cakes 18 cm

dough:
125g butter, softened at room temperature for 20 minutes
100g sugar
250g all-pupose flour
1 egg
large pinch of salt

filling:
1000g quark
300g sugar
¼ vanilla bean
zest from ½ lemon
5 egg yolks
5 egg whites, whipped
350ml cream, whipped
250ml milk
100g all-purpose flour
½ tsp. salt

Prepare the dough:
Mix butter and sugar together by hand.
Add the egg and mix until the ingredients are pretty smooth.
Then add the flour and salt and knead until the dough comes together and doesn´t crumble.
Flatten into a circle and chill in the fridge while you prepare the filling.
For the filling:
Mix together the quark, sugar, vanilla, lemon, egg yolks, milk, flour and salt until smooth.
Whip the cream and set aside to chill.
Whip the egg whites until soft peaks form, then fold them and the whipped cream into the rest of the mixture.
Set aside.
Preheat the oven to 200 degrees Celsius, then prepare the dough.
Roll out the dough in a circular shape to around 3mm thickness.
Cut out the bottom of the cake pan you are using and place inside your form.
Measure the height of your pan, roughly cut off the frayed edges of dough around what is left, leaving the height of your pan.
Roll up your cut out dough carefully and then use it to go along the rim of your cake pan.
Press the seams between bottom dough and outer dough gently together.
Now spoon the filling into the prepared pan.
Bake for 10 minutes, then turn down the heat to 165 degrees Celsius.
Bake for another 40 minutes, until the top is golden brown and the center seems set after you jiggle the cake.
Let cool completely, then refrigerate before serving.
Serve with berries if desired.



Okay, Ich gebe zu, dass ich den amerikanischen Käsekuchen bevorzuge.
Eine dichte Masse mit Frischkäse und Kräckerkruste, weißt du?
Ich hab da bereits ein tolles Rezept. 
Aber ich bin immer noch auf der Suche nach Variationen von dem klassisch deutschen Käsekuchen. 
Die deutsche Version hat auch ihre Vorteile – es hat diesen unvergleichlichen Geschmack vom Quarkkäse.
Er ist ziemlich fluffig und leicht und die Mürbeteigkruste ist wunderbar.
Diese Version ist von der Oma meiner besten Freundin und bisher ist er bei allen super angekommen für die ich ihn gebacken hab.
Ich bin auf jeden Fall offen für andere Versionen, also her mit den Rezepten, entweder per Mail oder FB, wenn ihr weitere würdige Variationen habt!

Klassischer Käsekuchen

Zeit: 50 Minuten plus 50 Minuten Backzeit
Ergibt: 1 Kuchen mit 28cm Durchmesser oder 2 Kuchen mit 18cm Durchmesser

Teig:
125g Butter
100g Zucker
1 Ei
250g Mehl Typ 405
kräftige Prise Salz

Füllung:
1000g Quark
300g Zucker
¼ Vanilleschote
5 Eigelb
5 Eiklar, geschlagen
250ml Sahne, geschlagen
250ml Milch
100g Mehl
½ Teelöffel Salz

Bereite den Teig zu:
Mische Butter und Zucker mit der Hand zusammen.
Füge das Ei hinzu und arbeite es glatt.
Füge daraufhin das Mehl und Salz hinzu und knete den Teig bis er zusammenhält und nicht mehr bröckelt. 
Drücke den Teig rund und flach und stelle ihn kühl während die Füllung zubereitet wird.
Um die Füllung herzustellen:
Mische den Quark mit dem Zucker, Vanille, Zitrone, Eigelb, Milch, Mehl und Salz zusammen glatt.
Schlage die Sahne auf und stelle sie bis zum Gebrauch kühl.
Schlage das Eiklar steif, bis es cremig ist und weiche Spitzen formt.
Hebe es zusammen mit der geschlagenen Sahne in den Rest der Masse. 
Stelle sie beiseite.
Heize den Ofen auf 200 Grad Celsius vor, rolle daraufhin den Teig aus.
Rolle ihn kreisförmig auf ca. 3mm aus.
Schneide den Boden deiner Kuchenform daraus zentriert aus und setze ihn in die Form um.
Messe die Höhe deiner Form aus, schneide die abgefransten Enden vom ausgerollten, kreisförmigen Teig ab und lasse die passende Höhe zurück.
Rolle den zugeschnittenen Teig vorsichtig zusammen und benutze es die Ränder der Form auszulegen. 
Drücke sanft den Abschluss zwischen Boden und Rand an.
Löffele nun die Füllung in die Kuchenform.
Backe für 10 Minuten, dann stelle die Temperatur runter auf 165 Grad Celsius.
Backe für weitere 40 Minuten, bis die Oberfläche goldbraun ist und man beim leichten ruckeln an der Form merkt, dass die Mitte sich gesetzt hat.
Lasse den Kuchen komplett auskühlen, stelle ihn zur Haltbarkeit in den Kühlschrank.
Serviere ihn, wenn gewünscht, mit Beeren.
