Millionaire's Bars.

 
 

These bars found unexpected favor with everyone that tried them. 
I guess it's the difference in texture - crunchy shortbread, creamy, sticky caramel and the crisp, dark bite of nuts and chocolate.
The addition of the different kinds of nuts and the goji berries make this an eye-catching treat.
Sprinkle on whatever you please, no matter if left plain or spiced up, they are super scrumptious.

Millionaires's Bars

adapted from a recipe by William Curley's 'Couture Chocolate'

time 10 minutes for shortbread plus 25 minutes baking time and additional 10 minutes baking time for roasting nuts, 20 minutes for caramel plus time to cool off, 30 minutes finishing off with chocolate and topping
yields one 22x32cm tray

shortbread:
125g butter, cut into cubes, softened for one hour at room temperature
185g all-purpose flour
60g sugar

Prepare the shortbread:
weigh all the ingredients into a bowl. 
Using your hands, knead them into a dough until it sticks together and doesn't crumble anymore.
Roll out to fit a 22x32cm tray.
Chill for one hour, then bake at 165 degrees for 25 minutes until golden.
Let cool, then make the caramel.

salted caramel:
125g cream
1/2 vanilla bean
250g sugar
40g glucose syrup
200g butter, cut into cubes
1 tsp. himalayan salt
1/2 tsp. rough sea salt

Boil the cream with the scraped vanilla bean in a saucepan or in the microwave.
Meanwhile, in a high saucepan, caramelize the glucose syrup and just enough sugar to cover the bottom. 
Once caramelized and with the sugar crystals dissolved, keep on adding sugar and repeating the process until all the sugar is caramelized.
Make sure there are no more sugar crystals and the caramel has an amber color when your holding up the spoon. 
Add the cream and stir carefully, it will bubble wildly, be mindful not to get burned by the steam. 
Mix well, then take off the heat.
Add the butter cube for cube until fully incorporated.
Pour over your shortbread crust and leave to firm up overnight.

topping:
200g dark chocolate
50g almonds
30g pecans
30g pistachios
20g cocoa nibs
30g goji berries

First, roast the almonds and pecans for 10 minutes at 175 degrees Celsius.
Let cool.
Then chop roughly with the pistachios and toss together with the cocoa nibs and goji berries.
Temper the chocolate until it has reached 32 degrees. 
Spread onto the caramel surface of the bars and sprinkle with the nut mix.
Let harden, then use a heated knife to cut into bars.


Diese Riegel haben grossen, unerwarteten Anklang mit jedem gefunden der sie probiert hat.
Ich denke es sind die unterschiedlichen Texturen - knuspriges Shortbread, das kremige, klebrige Karamell und der knackige, dunkle Biss von Nüssen und Schokolade.
Der Zusatz von den verschiedenen Nüssen und den Gojibeeren macht die Riegel auf jeden Fall zu einem Augenschmaus.
Was dein Herz begehrt kann oben draufgestreut werden, und egal ob es klassisch gelassen oder aufgepeppt wird, ist dieses Süß einfach lecker schmecker.

adaptiert von einem Rezept von William Curley's 'Couture Chocolate'

Zeit 10 Minuten für das  Shortbread plus 25 Minuten Backzeit ind weitere 10 Minuten Backzeit um die Nüsse abzurösten,  20 Minuten für das Karamell plus Zeit zum Abkühlen, 30 Minuten um die Riegel mit der Schokolade und den Garnierungen fertigzustellen
Ergibt eine 22x32cm Backform

Shortbread:
125g Butter, in Würfel geschnitten, eine Stunde zuvor bei Raumtemperatur erweichen lassen
185g Mehl Typ 405
60g Zucker

Bereite das Shortbread zu:
wiege alle Zutaten zusammen in eine Schüssel.
Knete mit Hilfe deiner Hände die Zutaten zu einem Teig zusammen, der nicht mehr krümelt und von alleine zusammen hält.
Rolle ihn aus um in eine 22x32cm Backform zu passen.
Stelle ihn für eine Stunde kalt, dann backe ihn bei 165 Grad für ca. 25 Minuten bis er goldbraun ist.
Lasse ihn auskühlen, mache daraufhin das Karamell.

Gesalzenes Karamell:
125g Sahne
1/2 Vanilleschote
250g Zucker
40g Glukosesirup
200g Butter, in Würfel geschnitten
1 Teelöffel Himalajasalz
1/2 Teelöffel grobes Meersalz

Koche die Sahne zusammen mit dem Inhalt der ausgekratzten Vanilleschote in einem Topf oder in der Mikrowelle auf.
Karamellisiere in der Zwischenzeit in einem höheren Topf die Glukose und gerade genug von dem Zucker um den Topfboden zu bedecken.
Wenn der Zucker karamellisiert ist und die Zuckerkristalle aufgelöst, füge nach und nach mehr von dem Zucker hinzu und wiederhole den Vorgang bis alles karamellisiert ist.
Stelle am Ende sicher, dass alle Zuckerkristalle aufgelöst sind und das Karamell eine Bernsteinähnliche Farbe angenommen hat wenn du den Löffel hochhält und das Karamell runterlaufen lässt.
Füge die Sahne hinzu und rühre vorsichtig um, es wird wild kochen, sei vorsichtig keine Verbrennung vom heissen Dampf zu bekommen.
Mische alles gut, dann nehme das Karamell von der Hitze.
Füge die Butter Würfel für Würfel hinzu bis eine homogene Masse entstanden ist.
Giesse sie über die Shortbread Basis und lasse sie Übernacht auskühlen und erhärten.

Topping:
200g dunkle Schokolade
50g Mandeln
30g Pecannüsse
30g Pistazien
20g Kakaobruch
30g Goji Beeren

Zu allererst, röste die Mandeln und Pecannüsse für 10 Minuten bei 175 Grad Celsius.
Lasse sie abkühlen.
Hacke sie daraufhin zusammen mit den Pistazien und mische mit dem Kakaobruch und den Goji Beeren.
Temperiere die Schokolade, sodass sie 32 Grad hat.
Verstreiche sie auf der Karamelloberfläche und streue den Nussmix drüber.
Lass die Schokolade anziehen, benutze dann ein erwärmtes Messer um Riegel zuzuschneiden.
