This mandatory workshop is part of the German Pastry Chef apprenticeship.
It's purpose is to expand the apprentice's craftsmanship.
Some of these things you do not get to do very often (or in some places - at all!) at your everyday work.
It was very fun (apart that I dragged myself sick through the first week) and I learned so much.
