Chocolate Tapioca Cream. Schokoladen Tapioca Creme.

 

I think I've mentioned before that I really like tapioca pudding?

It's an acquired taste - 
those slimy little balls, gooey texture...
Still, I really love it.
And what could make it even better?
Chocolate of course!

Chocolate Tapioca Cream

makes 4 servings

600ml milk (full fat)
50g tapioca
75g sugar
2 egg yolks
50g dark chocolate (at least 70%), chopped finely
10g cocoa powder
1/4 tsp pink himalayan salt
1/2 tsp vanilla extract
1/2 vanilla bean

Soak the tapioca in 100ml of the milk for half an hour.
Then add the rest of the milk, the sugar, the egg yolk, chocolate, cocoa powder, salt and vanillas.
Throw in the vanilla bean itself as well, this extracts even more flavor.
Bring to a boil at medium to high heat, but watch out that it is not too hot, or else the tapioca will burn or stick together, this might take around 10 minutes.
Boil for one minute, stirring all the while, then let simmer, while still stirring, until the tapioca pearls have gotten see-through and larger.
Remove the vanilla bean and pour the tapioca into four serving glasses or bowls.

Enjoy warm or cooled.

Ich glaub ich habe schon mal erwähnt dass ich Tapioca Pudding sehr mag, oder?

diese kleinen schleimigen Bällchen, diese klebrige Textur...
Trotzdem liebe ich es.
Und was könnte es noch besser machen?

Schokoladen Tapioca Creme

für 4 Portionen

600ml Milch (voll-Fett Stufe)
50g Tapiocaperlen
75g Zucker
2 Eigelb
50g dunkle Schokolade (mind. 70%), fein gehackt
10g Kakaopulver
1/4 Teelöffel Himalaya Salz
1/2 Teelöffel Vanille Extrakt
1/2 Vanilleschote

Lasse die Tapiocaperlen in 100ml der Milch für eine halbe Stunde einweichen.
Füge den Rest der Milch hinzu, zusammen mit dem Zucker, dem Eigelb, der Schokolade, dem Kakaopulver, dem Salz und den Vanillen.
Füge die Vanilleschote selber auch hinzu, da diese noch mehr Geschmack beim Kochen entfaltet.
Koche das Gemisch bei mittlerer bis hoher Hitze auf, aber gib Acht dass es nicht zu heiss ist, sonst brennen die Perlen unten am Topf an oder sie können zusammen kleben.
Es dauert ca. 10 Minuten um die Creme zum Kochen zu bringen.
Koche die Creme unter ständigem Rühren für eine Minute, lasse es dann weiter köcheln, auch unter rühren, bis die Perlen durchsichtig und merklich grösser geworden sind.
Entferne die Vanilleschote und giesse das Tapioca in vier Glässer oder Schüsseln.
Geniesse die Creme warm oder erkaltet.
