Instagram of the week.

Salted Honey Pie.


So I ate this kind of pie the first time in Portland, Oregon at Sweedeedee
(btw, a beautiful cafe - a great place to brunch and have some coffee and a sweet something!)
It was quite sweet, so I decided to make it a tad less sweet and have more salt flakes on the top. 
I made this just before Christmas and it's actually a great festive pie.

Salty Honey Pie

adapted from Melissa and Emily Elsen of Four + Twenty Blackbirds

Pie Crust:

this recipe makes one double crusted, 9-inch pie.

170g all-purpose flour
½ tsp. salt
1 Tbsp. sugar
125g unsalted butter, frozen
110ml cold water
2 Tbsp. cider vinegar
2-3 ice cubes
8-10 tablespoons ice water with cider vinegar, or more as needed (combine 1 cup cold water, 1/8 cup cider vinegar and ice)

Remove the butter out of the freezer and grate on a rough grater, this way it has the perfect size to work with.
Whisk the dry ingredients together and toss with the butter flakes.
Slowly add the ice water and vinegar mixture and bring the dough completely together by hand, again being careful not to overwork.
Aim to create a marbleized effect, so that the butter is still visible.
Wrap in plastic and chill 1 hour or more before use.
To pre-bake a crust for a custard pie: Roll out the dough to fit a 9-inch pan, about 1/4 inch thick.
Place in a buttered pie pan, and crimp the edges as desired.
Allow to rest and cool in freezer or fridge for at least 20 minutes.
Line the rolled-out crust with tinfoil or unwaxed parchment paper, add pie weights or about a cup of dry beans if you don’t have pie weights.
Distribute them evenly.
Bake in a 185 degree Celsius oven for 20 minutes.
Allow to cool slightly before filling with custard.

Preheat oven to 175 degrees Celsius.
Have prepared one pre-baked pie shell of your choice.

Filling:
125g butter, melted
120g white sugar
2 Tbsp. cornmeal
1/4 tsp. salt
250g honey
3 eggs
100g cream
2 tsp. white vinegar
¼ vanilla bean, scraped

2 Tbsp. flake sea salt for finishing

All of the mixing can be done by hand, or with an electric mixer.
Melt butter and combine with the sugar, salt and cornmeal to make a thick paste.
Add the honey, vanilla and vinegar and mix together.
Fold in the eggs, add the cream and blend.
Pour the filling into a pre-baked pie shell and bake for 45 to 60 minutes.
The filling will puff up like a marshmallow and the center will be just slightly wobbly.
Once cooled (at least one hour), finish with a sprinkling of flake sea salt.
Slice and serve with freshly whipped cream or coconut cream.



Also, diese Art Pie habe ich das erste Mal in Portland, Oregon bei Sweedeedee gegessen.
(übrigens ein ganz tolles Café - ein toller Ort um zu brunchen und einen Kaffee und ein kleines Süß zu geniessen!)
Es war ziemlich süß, also hab ich´s etwas weniger süß gemacht und mehr Salzflocken auf der Oberfläche hinzugefügt.
Den Pie habe ich vor Weihnachten gebacken und es macht sich hervorragend als festliches Süß.

Gesalzener Honig Pie 

adaptiert von Melissa and Emily Elsen of Four + Twenty Blackbirds

Pie Kruste:

170g Mehl
½ Teelöffel Salz
1 Eßlöffel Zucker
125g ungesalzene Butter, gefroren
110ml kaltes Wasser
2 Eßlöffel Apfelessig
2-3 Eiswürfel
8-10 tablespoons ice water with cider vinegar, or more as needed (combine 1 cup cold water, 1/8 cup cider vinegar and ice) 

Entnehme die gefrorene Butter aus dem Gefrierschrank und raspele sie auf einer groben Reibe. 
Mische die Trockenzutaten zusammen und mische die Butterflocken vorsichtig unter.
Füge langsam das Eiswasser mit dem Essig hinzu und wirke den Teig mit der Hand zusammen, aber nur bis er zusammen hält. 
Versuche einen marmorierten Effekt zu bekommen, wo die Butter noch zu sehen ist.
Verpacke den Teig in Frischhaltefolie und kühle ihn für eine Stunde. 
Um den Teig blind zu backen: rolle den Teig rund aus damit sie etwas größer als die Pie Form ist.
Passe den Teigrohling der Form an und gestalte den Rand je nach Wunsch.
Lasse ihn nun mindestens 20 Minuten in dem Gefrierschrank ruhen.
Lege den Boden mit Backpapier oder Alufolie aus und beschwere ihn mit Pie-Gewichten oder Trockenbohnen oder Reis.
Backe ihn bei 185 Grad Celsius für ca. 20 Minuten.
Lass ihn etwas abkühlen bis die Füllung eingefüllt wird.

Heize den Ofen nun auf 175 Grad Celsius und stelle die Füllung her.

Fülling: 
125g Butter, geschmolzen
120g Zucker
2 Eßlöffel Maisgrieß (Polenta)
1/4 Teelöffel Salz
250g Honig 
3 Eier
100g Sahne 
2 Teelöffel Weißweinessig
¼ Vanilleschote, ausgekratzt

2 Eßlöffel grobe Meersalzflocken zum garnieren

Das Mischen kann per Hand oder mit dem elektrischen Mixer erfolgen. 
Schmelze die Butter und kombiniere sie mit dem Zucker, Salz und der Polenta um eine dicke Paste zu erzielen.
Füge den Honig, die Vanille und den Essig hinzu und vermische alles gut.
Hebe die Eier unter, füge dann die Sahne hinzu und vermische alles.
Giesse die Füllung in die blind gebackene Kruste und backe für 45 bis 60 Minuten. 
Die Füllung wird aufgehen und die Mitte wird noch etwas wabbelig sein.
Wenn der Pie komplett ausgekühlt ist, sprenkel ihn gleichmässig mit dem Meersalz.
Serviere die Stücke mit Schlagsahne oder geschlagener Kokoscreme.

Christmas.


It is beautiful to be back home for the Christmas season. 
Apart from not being able to imagine celebrating this holiday in the hot sun, I couldn't wait to see my family and friends again after 9 months abroad. 
The joy to hug your loved ones, celebrate with them, catch up and look them in the eye from close-up and not from thousands of miles away is priceless.
I do miss a bunch of special people from afar, but obviously you can't be in two places at the same time and everyone I know is happy to spend the holidays with family. 

I hope everybody had or has a Merry Christmas and is enjoying themselves with loads of good food, Christmas tunes and the love of their kin and friends!


Es ist zauberschön zur Weihnachtszeit wieder Zuhause zu sein. 
Abgesehen davon dass ich mir's nicht vorstellen kann diesen Feiertag in der heissen Sonne zu verbringen, konnte ich es kaum erwarten meine Familie und Freunde nach 9 Monaten im Ausland weiterzusehen. 
Die Freude deine Liebsten zu drücken, mit ihnen zu feiern, auf den neusten Stand gebracht zu werden und sich dabei gegenüber zu sitzen und in die Augen zu schauen und nicht mit tausenden Kilometern dazwischen, ist unbezahlbar. 
Ich vermisse schon ein paar besondere Menschen aus der Ferne, aber man kann natürlich nicht an zwei Orten gleichzeitig sein und ich glaube jeden den ich kenne ist glücklich die Feiertage mit der Familie zu verbringen. 

Ich hoffe jeder hatte oder hat ein frohes Weihnachtsfest und geniesst es mit vielem leckeren Essen, Weihnachtsmelodien und die Liebe von den Nächsten!

Instagram of the week.


(1) airplane food from Thai Airways. Surprisingly good food, they really spoiled everyone in business class (2) on Tuesday I landed in Frankfurt, Germany at 5:30 AM and I was so happy to hang out in the lounge for a couple of hours until my next flight, eating proper yoghurt, eggs, bread and reading German newspaper - f.y.i. not just the yellow press, haha (3) on my second day home I went for a run - what a change, the sun rises after 8 AM in the morning, it's grey and the trees are bare - but what a joy to have crisp and cold weather! (4) anti-alles 'anti-everything' street art on the outskirts of my small town (5) oh, the glory of proper cheese and bread, also homegrown and -made mirabelle jam (6) church in Münster, pretty gorgeous, right? (7) veggie quiche from Pain&Gateau Michaelisplatz 9, 48143 Münster Germany (8) one of my favorite cakes from the same - German quark cheesecake with cherries and crumble (9) not typically German, but my families wish, American cookies for Xmas! (10) decorations on one of the many stands at the Christmas markets in Münster (11) dutch specialty: thick-cut french fries with Joppiesauce, a mayonnaise based, spiced sauce with onions (12) the last candle waiting to be burned on the wreath for the last of advent! (13) my favorite bakery bought pastry 'Rosinenstriezel', it's a flaky but moist brioche dough with loads of raisins and marzipan filling (14) for a christmas meet-up with friends I made a vegan quince and apple pie with crumble topping and salted honey pie with butter crust (15) polaroid session with friends! Vegan Chewy Honey & Hazelnut Caramels.


I left Portland in October. 
I left some good friends behind.
Some are vegan. 
I wanted to make something special. 
I tried these Oregon inspired caramels at Quin so I decided to make my own version with Oregon hazelnuts and U.S. clover honey. 
They turned out pretty well. 
(Ha, even though I didn't have a thermometer and just did the soft-ball test in cold water!)

Vegan Chewy Honey & Hazelnut Caramels

210g sugar
60g honey
125g vegan butter
200g vanilla coconut milk
1 tsp vanilla extract
1/4 tsp. salt
1/4 tsp. fleur de sel

Add all ingredients into a heavy bottomed pan (I use a cast iron pan).
Make sure the sides are high enough, or else your mixture might boil over.
Set aside a cold water bath.
Cook at medium heat while stirring to 117/118 degrees Celsius.
For me, it took around 15-20 minutes.

Be aware, it might take shorter or longer depending on you pan and your heat!

When the temperature is reached, cool down the bottom of the pan in the water bath.
Then pour into a prepared buttered pan or into silicon molds.
Wait a couple of hours (even better is overnight!) until the caramel is set to cut.
Wrap in backing paper.
Keep in a cool, dry place to avoid crystallization.


Portland verliess ich im Oktober. 
Ich habe ein gute Freunde zurück gelassen. 
Einige sind vegan. 
Ich wollte etwas Besonderes machen. 
Ich habe diese Oregon inspirierte Weichkaramell bei Quin gegessen und habe mich entschieden meine eigene Version mit Haselnüssen aus Oregon und Klee Honig aus den U.S.A. zu machen. 
Lecker sind sie geworden. 
(Ha, und obwohl ich kein Thermometer hatte und nur den Test zum Zuckerstadium - kleiner Ballen - in kaltem Wasser gemacht habe!)

Übrigens, auch eine tolle Geschenkidee für Weihnachten!

Vegane Weichkaramell mit Honig & Haselnüssen

210g Zucker
60g Honig
125g vegane Butter
200g Kokosmilch (Vanille)
1 Teelöffel Vanille Extrakt
1/4 Teelöffel Salz
1/4 Teelöffel Fleur de sel

Füge alle Zutaten in eine schwere Pfanne bzw. einen schweren Topf (ich benutze Gußeiserene).
Stelle sicher dass der Rand hoch genug ist, sonst besteht die Gefahr dass die Mischung überkocht. 
Bereite ein kaltes Wasserbad zum Abschrecken vor. 
Koche alles auf mittlerer Hitze hoch auf 117/118 Grad Celsius.
Bei mir hat es ca. 15-20 Minuten gedauert. 

Vorsicht: die Kochzeit kann sich entweder verlängern oder verkürzen, je nachdem wie stark deine Hitze ist!

Wenn die Temperatur erreicht ist, kühle die Unterseite des Topfes in dem Wasserbad herunter. 
For me, it took around 15-20 minutes.
Giesse nun das Karamell in eine gefettete oder ausgelegte Form oder in Siliconförmchen. 
Warte ein paar Stunden (noch besser ist es über Nacht!), bis das Karamell fest genug zum schneiden ist. 
Verpacke es in Waxpapier. 
Lagere es in einem kühlen, trockenen Ort um vorzeitige Kristallisierung zu verhindern.

Hello Germany.


Hello Germany.

I’m back.
I’m happy and grateful to spend the festive season with my family and friends. 
Not everyone I love can come together with me though and part of my heart is elsewhere. 
And I will miss traveling and meeting new beautiful souls. 

I don’t want to be too open about my future plans because they can change. 
Keep on following my adventures, culinary and otherwise, on this blog and Instagram. 

And now for a mulled wine…


Hallo, Deutschland.

Du hast mich wieder. 
Ich bin glücklich und dankbar die Feiertage mit meiner Familie und meinen Freunden zu verbringen. 
Leider sind nicht alle die ich lieb habe bei mir und ein Teil meines Herzens verweilt woanders. 
Und ich werde es vermissen zu reisen und neue, wunderschöne Menschen kennen zu lernen. 

Ich will nicht zu offen über meine Zukunftspläne sprechen, da sie sich noch ändern können. 
Folge mir gerne bei meinen Abenteuern, kulinarischer oder anderer Art, auf diesem Blog und auf Instagram.
